  • 1 sheet store-bought puff pastry (thawed)
  • 1 cup blanched almond flour
  • ½ cup light brown sugar (packed)
  • ½ cup salted butter (softened)
  • 1½ tablespoons all-purpose flour
  • 1 large egg
  • 1 teaspoon pure almond extract
  • ¼ cup sliced almonds
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix almond flour, brown sugar, softened butter, all-purpose flour, egg, almond extract, and a pinch of salt until combined.
  3. Roll out the thawed puff pastry into an 11×11 square and cut it into twenty-four 2×2 inch squares.
  4. Press each square into the cavities of a mini muffin pan.
  5. Fill each pastry cup with about one tablespoon of the almond filling and top with sliced almonds.
  6. Bake for 10 to 15 minutes until golden brown. Let cool on a wire rack and dust with powdered sugar before serving.
