  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 3 bricks cream cheese (softened)
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • mulling spices
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 tablespoons all-purpose flour
  • 2 tablespoons powdered sugar

Instructions

  1. Reduce the fresh apple cider by boiling it with mulling spices until thickened (about one hour). Allow to cool.
  2. Preheat oven to 350°F. In a food processor, combine digestive cookies, melted butter, salt, and powdered sugar; pulse until crumbly. Press into an 8” springform pan and bake for 10 minutes.
  3. Lower oven temperature to 325°F. In a mixer, beat cream cheese and brown sugar until smooth. Add sour cream, vanilla extract, reduced apple cider, salt, cinnamon, and mix well.
  4. Gradually add eggs and flour, mixing just until combined.
  5. Pour filling into the cooled crust and place in a larger dish filled with hot water to bake for about 90 minutes or until edges are set but center is slightly wobbly.
  6. Turn off the oven and leave cheesecake inside for 30 minutes before removing to cool on the counter, then refrigerate for at least 8 hours before serving.
