  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9” square baking dish with parchment paper.
  2. In a sauté pan, boil fresh apple cider until reduced by half (about 5 minutes). Measure out ¾ cup after cooling slightly.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until well combined.
  4. Stir in the reduced cider and gently fold in the flour until just mixed.
  5. Pour into the prepared dish and bake for 22 to 25 minutes or until golden and a toothpick comes out clean.
  6. Cool for five minutes before topping with room-temperature butter and sprinkling with cinnamon sugar.
