  • 1 cup apple cider, reduced to ¼ cup
  • ½ cup whole milk
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • ½ cup caramel sauce
  • Pinch of salt
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and gather all ingredients.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, cream together softened butter and brown sugar until fluffy.
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add dry ingredients alternating with reduced apple cider and milk until smooth.
  6. Drop rounded tablespoons onto a lined baking sheet; bake for about 10 minutes or until set.
  7. Cool cookies on a wire rack before preparing the filling.
  8. For filling: Beat together butter and powdered sugar until creamy; mix in remaining ingredients.
  9. Once cookies are cool, spread or pipe filling between two cookies to assemble.
