Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a bundt pan or two round cake pans.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In another bowl, blend cooking oil, granulated sugar, eggs, and vanilla extract until smooth.
  4. Fold in the chopped apples and pecans into the wet mixture.
  5. Pour the batter into prepared pan(s) and bake for about 60 minutes or until a toothpick comes out clean.
  6. For the caramel glaze: Melt butter in a saucepan over medium heat; stir in brown sugar and milk until combined—bring to a gentle boil before removing from heat and adding vanilla extract.
  7. Once the cake cools completely, drizzle warm caramel glaze generously over it.
