  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine cream cheese, cheddar cheese, jalapeños, green onion, garlic powder, salt, and pepper until well blended.
  2. Lay an eggroll wrapper on a flat surface. Place about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling and roll tightly while folding in the sides. Use water to seal the edges.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry the eggrolls seam-side down in batches for about 3-4 minutes or until golden brown and crispy.
  4. Drain on paper towels and serve hot with your favorite dipping sauce.
