  • 4 tablespoons extra virgin olive oil
  • 34 cloves garlic (minced)
  • 2 tablespoons fresh thyme leaves (or 2 teaspoons dried thyme)
  • 2 tablespoons aged balsamic vinegar
  • 1 tablespoon granulated sugar
  • Salt and pepper
  • 1 pound spaghetti (or fettuccini)
  • 1 cup fresh basil leaves
  • ½ cup shaved parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and dry the cherry tomatoes, then cut them in half and place them on a large baking sheet.
  3. Drizzle olive oil and balsamic vinegar over the tomatoes, then sprinkle minced garlic, thyme, sugar, salt, and pepper.
  4. Roast in the preheated oven for 30 to 40 minutes until soft and juicy.
  5. Meanwhile, cook your pasta according to package instructions; reserve half a cup of pasta water before draining.
  6. Toss the roasted tomatoes with cooked pasta and fresh basil. Adjust consistency with reserved pasta water if needed.
