  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • Fresh parsley (optional), chopped

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter. Sauté diced onion until translucent (3–4 minutes).
  2. Add ground beef to the skillet; cook until browned (about 5 minutes). Drain excess fat.
  3. Stir in minced garlic and cook for about 1 minute until fragrant.
  4. Add rice, beef broth, Italian seasoning, salt, and pepper to the skillet; stir well.
  5. Bring to a boil, then reduce heat to low and cover. Cook for 18–20 minutes until rice is tender.
  6. In a separate saucepan over low heat, melt remaining butter; stir in Parmesan cheese, cheddar cheese, and milk until smooth.
  7. Combine cheese sauce with the beef-rice mixture in the skillet; stir until well blended.
  8. Cook uncovered for an additional few minutes before serving warm.
