  • 6 cups fresh spinach leaves
  • 1 cup fresh strawberries (sliced)
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted pecans
  • 1/4 cup thinly sliced red onion
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey (optional)

Instructions

  1. In a large bowl, combine fresh spinach leaves, sliced strawberries, blueberries, red onion, and toasted pecans.
  2. Sprinkle crumbled feta cheese over the top of the salad mixture.
  3. To make the balsamic glaze, simmer balsamic vinegar in a small saucepan over medium heat until reduced by half. If using honey, stir it in once cooled slightly.
