  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat; cook chicken for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
  2. In a saucepan, bring chicken broth and salt to a boil. Add rice, reduce heat, cover, and simmer for 15-20 minutes until tender.
  3. In the same skillet used for the chicken, melt butter over medium heat. Whisk in flour to make a roux. Gradually add milk and some reserved broth until smooth. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  4. Return chicken to skillet and spoon sauce over it; let simmer on low heat for a few minutes before serving over rice.
