  • 2 1/2 cups peeled and sliced peaches (about 56 peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 3/4 cup all-purpose flour (divided)
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter (diced)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and 1/4 cup flour. Toss gently until well coated.
  3. In another bowl, whisk together the remaining flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Mix in cold butter with fingers until crumbly.
  4. Place fruit mixture in a baking dish and sprinkle crumble topping evenly over it.
  5. Bake for 40-45 minutes until golden brown and bubbly. Serve warm or at room temperature.
