  • ¼ cup unsalted butter, melted
  • 2 cups whole milk (for pastry cream)
  • ½ cup granulated sugar (for pastry cream)
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 teaspoons vanilla extract
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. In a large bowl, mix flour, sugar, yeast, and salt. In another bowl, whisk warmed milk, eggs, and melted butter. Combine both mixtures and knead until smooth.
  2. Let the dough rise in a greased bowl covered with a towel for about an hour until doubled in size.
  3. Meanwhile, prepare the pastry cream by heating milk and sugar until steamy. Whisk together egg yolks and cornstarch; temper with hot milk mixture. Cook until thickened and then stir in vanilla extract.
  4. Roll out the dough and cut circles; let them rise for another 30 minutes.

  6. Fill cooled bomboloni with pastry cream using a piping bag and dust with powdered sugar before serving.
