  • ¼ cup peach juice
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon coarse ground mustard
  • 2 teaspoons garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 4 salmon fillets (about pounds)
  • 1 tablespoon extra virgin olive oil
  • 2 medium peaches, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F.
  2. In a bowl, mix peach preserves, peach juice, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, pepper, and red pepper flakes to create the marinade.
  3. Marinate the salmon fillets in half of the marinade for at least 30 minutes.
  4. Heat olive oil in an oven-safe skillet over medium-high heat; sear salmon skin-side up for 2-3 minutes.
  5. Flip the salmon, add peach slices around it, then pour the reserved marinade over everything.
  6. Bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F.
  7. Serve immediately with fresh parsley garnish.
