  • 3 cups cold cooked rice
  • 4 large eggs
  • 1 medium white onion (diced)
  • 2 cloves garlic (minced)
  • 3 tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 cup frozen peas and carrots
  • ½ cup frozen corn
  • 4 green onions (sliced)
  • Optional: turkey bacon or tofu as a protein alternative

Instructions

  1. In a skillet over medium heat, cook chopped turkey bacon or tofu until crispy. Remove and drain excess fat.
  2. Scramble the eggs in a bowl with salt and pepper; set aside.
  3. Sauté diced onion in the remaining fat until translucent, then add minced garlic.
  4. Stir in the cold rice, mixing well to coat it with flavors; fry for about 5 minutes.
  5. Add soy sauce, sesame oil, peas, carrots, and corn; stir until heated through.
  6. Gently fold in cooked bacon or tofu and scrambled eggs. Top with sliced green onions before serving.
