  • 5 pounds red potatoes (chopped)
  • 1/3 cup milk
  • 1/2 cup sour cream
  • 3/4 cup butter
  • 2 cloves garlic (minced)
  • 1 & 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 1 & 1/2 teaspoons onion powder
  • 23 tablespoons parsley (fresh, chopped or 2 teaspoons dried)
  • 1/3 cup Parmesan (grated)
  • 1 to 5 teaspoons horseradish sauce (to taste)

Instructions

  1. Boil the chopped potatoes in salted water until fork-tender (about 20-35 minutes). Drain.
  2. Return potatoes to the pot and mix in milk, sour cream, garlic, onion powder, parsley, Parmesan cheese, salt, pepper, and horseradish sauce.
  3. Mash until creamy using a potato masher or hand mixer.
  4. In a separate pan over medium heat, melt butter until it turns golden brown and fragrant.
  5. Fold the brown butter into the mashed potatoes or serve it on the side for drizzling.
