  • 1 (20-ounce) package refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil water in a large pot. Cook the cheese tortellini according to package instructions (about 7-10 minutes) until tender.
  2. While the pasta cooks, prepare the mushrooms and chop the sage.
  3. In a skillet over medium-high heat, melt 1 tablespoon of butter and the olive oil. Add chopped sage and cook until crispy (about one minute). Remove and set aside.
  4. In the same skillet, add sliced mushrooms and minced garlic with another tablespoon of butter. Sauté for five minutes until browned.
  5. Combine cooked tortellini in the skillet with remaining butter, parmesan cheese, and crispy sage. Toss until well-coated and season with salt and pepper to taste.
