  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)
  • 1/2 cup all-purpose flour (for cobbler topping)
  • 1/3 cup brown sugar (for cobbler topping)
  • 1/2 teaspoon ground cinnamon (for cobbler topping)
  • 1/4 cup cold unsalted butter, diced (for cobbler topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, combine milk, vegetable oil, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined. Fold in the cherries.
  5. For the cobbler topping, mix flour, brown sugar, and cinnamon in a small bowl. Cut in diced butter until crumbly.
  6. Fill muffin cups two-thirds full with batter and top each with streusel.
  7. Bake for about 20–25 minutes or until golden brown and a toothpick comes out clean.
  8. Cool for 5 minutes before transferring to a wire rack.
