  • 2 tbsp olive oil

  • 1 tsp dried thyme or Italian seasoning
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, heat olive oil. Season chicken with salt, pepper, and thyme. Sear for about 5-6 minutes on each side until golden brown.
  3. Set chicken aside; in the same skillet, sauté garlic until fragrant. Add mushrooms and cook until softened, then stir in spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer for about 3-4 minutes until thickened.
  5. Place chicken in the baking dish and pour the sauce over it. Top with mozzarella and Parmesan cheese.
