  • 1 1/4 tsp coarse salt
  • 1 2/3 cup warm water
  • Sliced pear
  • Pearl onions
  • Cherry tomatoes
  • Red onion
  • Fresh rosemary
  • Olive oil

Instructions

  1. In a large bowl, mix bread flour, yeast, and salt. Stir in warm water until a shaggy dough forms. Cover and let rise overnight (12 hours).
  2. Next day, drizzle olive oil in a casserole dish. Transfer the dough into the dish and dimple it lightly; cover and let it rise for another 2 hours.
  3. Preheat the oven to 400°F (200°C). Decorate the focaccia with rosemary sprigs, sliced pear, cherry tomatoes, and pearl onions.
  4. Bake for about 25 minutes until golden brown. Allow to cool slightly before slicing.
