  • ¼ cup sugar
  • ½ cup melted butter
  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • 24 oz cream cheese (softened)
  • 1 cup sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 cup sour cream
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (optional, to thin if needed)

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter for the crust; press into the bottom of a springform pan.
  2. Combine softened butter, brown sugar, and cinnamon in another bowl; spread over the crust.
  3. Beat cream cheese until smooth; gradually add sugar, eggs one at a time, then stir in sour cream and vanilla until well combined. Pour half over the cinnamon layer, swirl in additional brown sugar and cinnamon mixture, then top with remaining filling.
  4. Bake for about 55 minutes until set but slightly jiggly; cool and refrigerate for at least four hours.
  5. While chilling, prepare frosting by mixing softened cream cheese and butter with powdered sugar and vanilla.
