  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Beat softened butter and sugar until fluffy; add eggs one at a time along with vanilla and coconut extracts.
  4. Gradually mix in the dry ingredients with coconut milk until smooth.
  5. Divide the batter between pans and bake for 25–30 minutes or until golden brown.
  6. Let cakes cool completely before frosting.
  7. Prepare frosting by mixing cream cheese and powdered sugar; fold in whipped cream.
  8. Layer cakes with frosting in between and cover the top and sides.
  9. Press toasted coconut onto the frosted cake; chill before serving.
