  • 1 Tablespoon Coconut Oil (or canola oil)
  • 1 Onion (diced)
  • 1 Tablespoon Fresh Ginger (minced)
  • 4 Garlic Cloves (minced)
  • 1 Red Chili (minced)
  • 2 to 3 Tablespoons Soy Sauce
  • 3 Tablespoons Red Curry Paste
  • 1 Tablespoon Brown Sugar
  • 2 (14-ounce) cans Coconut Milk
  • 1 1/2 lbs. Chicken Breast (sliced)
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Cilantro, Chili Oil or Chili Crunch, Scallions, Fresh Lime
  • Steamed Rice

Instructions

  1. Heat coconut oil in a large skillet over medium heat. Add diced onion and sauté for 4-5 minutes until softened. Stir in minced ginger, garlic, and chopped red chili; cook for another 2 minutes until fragrant.
  2. Pour in coconut milk, add brown sugar, soy sauce, salt, pepper, and red curry paste. Stir well to combine.
  3. Add sliced chicken breast to the skillet, lowering the heat to medium-low. Simmer gently for 15-20 minutes until chicken is cooked through.
  4. Remove from heat once the chicken is tender. Garnish with lime juice and cilantro before serving over steamed rice.
