  • 2 tablespoons olive oil
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • ½ teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley, chopped (plus more for garnish)
  • 12 oz linguine pasta
  • 1 teaspoon salt (for boiling water)

Instructions

  1. Cook the Chicken: Season sliced chicken with smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for about 4–5 minutes on each side until golden brown and fully cooked. Remove from skillet.
  2. Cook the Pasta: Boil salted water in a large pot and cook linguine according to package directions until al dente. Reserve ½ cup of pasta water before draining.
  3. Make the Cowboy Butter Sauce: In the same skillet used for chicken, melt butter over medium heat. Sauté minced garlic until fragrant. Stir in Dijon mustard, lemon juice, red pepper flakes, Italian seasoning, parsley, salt, and pepper; simmer for 1–2 minutes.
  4. Combine: Add drained pasta to the skillet with sauce and toss until well-coated. If needed, use reserved pasta water to adjust sauce consistency. Fold in sliced chicken gently.
  5. Serve: Garnish with more parsley and serve warm.
