  • 15.5 oz black beans, drained and rinsed
  • 15.5 oz black-eyed peas, drained and rinsed
  • 15 oz sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and sweet corn under cold water. Pat dry.
  2. In a large bowl, combine the beans and corn with cilantro, red bell pepper, orange bell pepper, and red onion.
  3. In another bowl, whisk together chili powder, kosher salt, granulated sugar, olive oil, white apple vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and stir gently until evenly coated.
  5. Refrigerate for at least 30 minutes before serving to let flavors meld.
