  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon celery seeds
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. Thinly slice the cabbage using a sharp knife or mandoline and place it in a large bowl.
  2. Core and dice the apples into small, bite-sized pieces and add them to the bowl.
  3. Toss in the dried cranberries and coarsely chopped nuts if using.
  4. Chop the parsley finely before adding it to the bowl.
  5. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey (or maple syrup), and Dijon mustard until smooth and creamy.
  6. Add celery seeds, salt, and pepper into the dressing mixture.
  7. Pour the dressing over the cabbage mixture and gently toss everything together until evenly coated.
