  • 1 ½ cups graham cracker crumbs
  • 1 cup all-purpose flour
  • ½ cup granulated sugar (for crust)
  • ¾ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar (for filling)
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, flour, sugar, and salt. Stir in melted butter until combined.
  3. Press two-thirds of the mixture into the bottom of the prepared dish.
  4. In another bowl, beat cream cheese until smooth; gradually add sugar. Mix in eggs one at a time, then lemon zest, juice, and vanilla until well combined.
  5. Pour filling over the crust and sprinkle remaining crumb mixture on top.
  6. Bake for 30–35 minutes until set but slightly jiggly in the center. Cool at room temperature for an hour before chilling in the fridge for at least three hours.
  7. Slice into bars and serve!
