  • 2 tablespoons olive oil
  • 1 pound ground chicken sausage (or turkey)
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. Cook penne pasta in well-salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium-high heat, add olive oil and brown the ground sausage, breaking it apart as it cooks.
  3. Reduce heat to medium, add minced garlic, and sauté until fragrant.
  4. Stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes; bring to a simmer.
  5. Add heavy cream and simmer for about 3-5 minutes until thickened.
  6. Stir in grated Parmesan cheese until melted; add cooked sausage and baby spinach until wilted.
  7. Toss in the cooked penne pasta, adding reserved pasta water to achieve the desired sauce consistency.
