  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets and prick with a fork. Place parchment on top and weigh down.
  2. Bake for 35-45 minutes until golden. Cool completely before trimming edges to fit an 8×8-inch pan.
  3. Whisk together sugar, cornstarch, and salt; add egg yolks and combine.
  4. Warm milk in another saucepan until steaming; gradually mix into the egg mixture to temper.
  5. Cook over medium heat while whisking until thickened (5-7 minutes). Stir in vanilla seeds and cold butter until smooth.
  6. Assemble by layering one piece of pastry at the bottom of the pan, pouring in custard, then topping with another pastry layer. Chill for at least four hours or overnight.
  7. Once chilled, slice into squares and dust with powdered sugar before serving.
