  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi)
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F and grease a baking pan.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, vanilla extract, milk, and vegetable oil to the dry ingredients; whisk until combined.
  4. Pour in hot coffee and mix until smooth.
  5. Bake for about 25 minutes or until a toothpick comes out clean.
  6. While the cake cools, toast chopped kataifi with butter until golden brown.
  7. Mix toasted kataifi with pistachio cream for the filling.
  8. For ganache, combine chopped chocolate with heavy cream; microwave until melted and smooth.
  9. Spread pistachio mixture over the cooled cake and drizzle with ganache.
