  • ½ batch rough puff pastry or classic puff pastry (or store-bought)
  • 1 cup fig jam
  • ½ cup prepared caramelized onions, rough chopped
  • 4 ounces goat cheese
  • Fresh thyme (6-10 sprigs)
  • Egg wash (1 egg whisked with 1 teaspoon water)

Instructions

  1. Prepare your puff pastry or thaw store-bought pastry.
  2. Preheat the oven to 400ºF and line a baking sheet with parchment paper.
  3. Roll out the pastry to about ⅛ inch thick and cut into at least 16 circles.
  4. Dock each circle with a fork and place on the baking sheet.
  5. Brush with egg wash and add caramelized onions in the center of each.
  6. Chill briefly while chopping goat cheese into pieces.
  7. Bake for about 12 minutes until slightly puffy but not golden.
  8. Fill with fig jam and goat cheese chunks; return to oven for another 5-8 minutes until golden brown.
  9. Cool slightly, garnish with thyme, and serve warm.
