Ingredients

  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (for the base)
  • 1 cup chocolate chips (for the topping)
  • 1 tsp coconut oil (for the topping)

Instructions

  1. In a bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined. Stir in chocolate chips.
  2. Line a cutting board with parchment paper and press the cookie dough mixture into a flat layer about half an inch thick.
  3. In a separate bowl, melt chocolate chips with coconut oil in the microwave until smooth.
  4. Pour melted chocolate over the cookie dough base and spread evenly. Optionally sprinkle with flaky sea salt.
  5. Chill in the freezer for about 10 minutes until set. Cut into pieces and enjoy!
