  • 1 tbsp butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves or 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large Dutch Oven, melt the butter over medium heat. Cook the bacon until crispy, then drain excess fat, leaving about 2 tablespoons in the pot.
  2. Add leeks, carrots, celery, and thyme; sauté for about 5 minutes until tender. Stir in garlic and cook for an additional minute.
  3. Sprinkle in flour and mix well. Gradually add chicken stock while scraping the bottom of the pot to incorporate flavors. Bring to a boil and season with salt and pepper.
  4. Add potatoes, turkey, and bay leaves. Cover and place in a preheated oven at 350°F (180°C) for about 45 minutes until all ingredients are tender.
  5. Stir before serving; add cream if desired and garnish with fresh parsley.
