  • 1 cup smooth peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup unsalted sweet cream butter (softened)
  • 1/2 cup smooth peanut butter
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix flour, baking soda, and salt. In another bowl, cream together softened butter, brown sugar, and peanut butter until fluffy.
  2. Add the egg and vanilla to the creamed mixture; beat until well combined.
  3. Scoop tablespoon-sized amounts of dough, roll into balls, then coat in sugar before placing on a lined baking sheet.
  4. Bake for about 10 minutes or until lightly golden at the edges. Let cool on the baking sheet for a few minutes before transferring to wire racks.
  5. For filling, beat together softened butter, peanut butter, powdered sugar, milk, and vanilla until smooth.
  6. Once cookies are cool, spread or pipe filling between two cookies to create sandwiches.
