  • 1 lb ground beef or ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 cup white rice
  • 2 cups chicken broth
  • Diced bell peppers
  • Frozen peas

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a bowl, combine meat with breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, pepper, and salt. Form into small meatballs.
  3. Sear meatballs in a skillet over medium heat until browned.
  4. In a saucepan, mix honey, soy sauce, ketchup, water, and minced garlic; simmer until slightly thickened.
  5. Spread uncooked rice in the baking dish; add bell peppers and peas. Pour in chicken broth and nestle meatballs on top. Drizzle with honey garlic sauce.
  6. Cover with foil and bake for 40 minutes; remove foil and bake for an additional 10–15 minutes until rice is tender.
