  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Chopped green onions, for garnish

Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve ½ cup pasta water before draining.
  2. Season cubed chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 5-7 minutes until golden brown.
  3. In the same skillet, sauté sliced carrots for about 3-4 minutes. Add minced garlic and cook for an additional minute.
  4. Reduce heat and add butter to skillet until melted. Stir in honey, soy sauce, and black pepper; simmer for 2-3 minutes until thickened.
  5. Return cooked chicken to the skillet, toss in rigatoni, and mix thoroughly. Use reserved pasta water if needed to adjust sauce consistency.
  6. Serve warm, garnished with chopped green onions.
