  • 3 cups old-fashioned rolled oats
  • 2 cups powdered sugar, sifted
  • 34 tablespoons milk or cream
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter, light brown sugar, and granulated sugar until smooth.
  3. Add eggs one at a time along with vanilla extract; mix well.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to wet mixture until just combined.
  5. Fold in rolled oats gently.
  6. Spread batter into a greased baking dish and bake for 25-30 minutes until golden brown.
  7. Allow to cool completely before preparing icing by whisking together powdered sugar, milk or cream, and vanilla extract until smooth.
