  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/3 cup sour cream (or Greek yogurt)
  • 1/4 cup white sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla essence
  • 1 1/2 cups finely grated zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the plain flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the eggs, vegetable oil, sour cream (or Greek yogurt), white sugar, brown sugar, and vanilla until well combined.
  4. Finely grate the zucchini and squeeze out excess moisture.
  5. Fold the dry ingredients into the wet mixture until just combined. Stir in the squeezed zucchini and half of the chocolate chips.
  6. Pour the batter into a greased loaf pan and sprinkle remaining chocolate chips on top.
  7. Bake for about 55 minutes or until a toothpick inserted comes out clean. Allow cooling before slicing.
