- 8 chicken thighs
- ½ head cabbage, roughly chopped
- 4 potatoes, peeled and sliced into ¼-inch rounds
- 1 medium onion, sliced
- ½ cup chicken stock
- 1 ½ teaspoons thyme
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- Salt and pepper, to taste
- Preheat your oven to 375°F (190°C).
- Mix dry rub ingredients: thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper in a bowl; coat chicken thighs evenly.
- In a large oven-safe pan over medium heat, cook reserved fat until crispy.
- Sear seasoned chicken thighs in the fat until browned on both sides.
- Sauté chopped cabbage in the same pan for 2–3 minutes until slightly wilted.
- Add sliced potatoes, onions, and chicken stock; stir well.
- Mix in chopped bacon and arrange chicken on top of vegetables.
- Bake for 45–50 minutes until chicken reaches an internal temperature of 165°F (75°C).
