  • 8 chicken thighs
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix dry rub ingredients: thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper in a bowl; coat chicken thighs evenly.
  3. In a large oven-safe pan over medium heat, cook reserved fat until crispy.
  4. Sear seasoned chicken thighs in the fat until browned on both sides.
  5. Sauté chopped cabbage in the same pan for 2–3 minutes until slightly wilted.
  6. Add sliced potatoes, onions, and chicken stock; stir well.
  7. Mix in chopped bacon and arrange chicken on top of vegetables.
  8. Bake for 45–50 minutes until chicken reaches an internal temperature of 165°F (75°C).
