  • 3 pounds beef stew meat (or lamb)
  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • Fresh herbs: rosemary and thyme
  • 1/4 cup all purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 2 teaspoons fresh rosemary
  • 2 each bay leaves

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. In a zip-top bag, toss beef with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme until well-coated.
  2. Sear the seasoned meat in the hot oil until golden brown on all sides to enhance flavor.
  3. Pour in the beef broth while stirring to deglaze the pot. Add carrots and bay leaves; bring to a boil.
  4. Reduce heat to medium-low and simmer for about 45 minutes. Stir occasionally.
  5. Five minutes before serving, add frozen peas and remove bay leaves.
