  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 cups Japanese short-grain rice
  • 2 ½ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¼ cup tonkatsu sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ketchup
  • 1 cup shredded cabbage
  • 2 green onions, sliced
  • Sesame seeds, for garnish
  • Pickled ginger (optional)

Instructions

  1. Rinse and soak the rice for 30 minutes, then cook in a saucepan with water.
  2. Pound chicken breasts to even thickness, season with salt and pepper.
  3. Set up a breading station: flour, beaten eggs, and panko breadcrumbs.
  4. Dredge chicken in flour, dip in eggs, then coat with panko.
  5. Fry each piece in heated vegetable oil until golden brown (4-5 minutes per side).
  6. Mix tonkatsu sauce ingredients together.
  7. Serve rice topped with sliced katsu, shredded cabbage, and drizzle with sauce.
