  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup for topping.
  2. Press remaining mixture into an 8×8-inch pan lined with parchment paper. Bake for 12-15 minutes until lightly golden.
  3. In another bowl, whisk together eggs, sugar, flour, lemon juice, and zest until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle with reserved crumbs on top.
  5. Bake for an additional 20-25 minutes until set and golden brown.
  6. Let cool completely before refrigerating for at least an hour. Slice and dust with powdered sugar before serving.
