  • 1 lb Ground Beef (or turkey/chicken)
  • 1/2 cup Diced Onion
  • 1/2 cup Breadcrumbs
  • 1 large Egg
  • 1/4 cup Milk
  • 2 cups Macaroni
  • 2 cups Cheddar Cheese, shredded
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 2 cups Milk
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Paprika
  • 1/2 tsp Dry Mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine 1 lb ground beef, 1/2 cup diced onion, 1/2 cup breadcrumbs, 1 large egg, 1/4 cup milk, 1 tsp salt, and 1/2 tsp pepper. Mix well and press into a greased 9×13-inch baking dish.
  3. Bake the meatloaf for 20 minutes.
  4. Cook 2 cups macaroni according to package directions; drain.
  5. In a saucepan over medium heat, melt 2 tbsp butter; stir in 2 tbsp flour and cook for about one minute. Gradually whisk in 2 cups milk until thickened. Add salt, pepper, paprika, dry mustard, and 1½ cups shredded cheddar cheese until melted.
  6. Stir the cooked macaroni into the cheese sauce and pour over the meatloaf. Sprinkle with remaining cheese.
  7. Bake for another 25 minutes until bubbling and golden brown.
