  • 1.5 lbs white fish fillets (like cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a large bowl, combine the onions, bell peppers, cherry tomatoes, garlic, olives, olive oil, oregano, salt, and pepper. Toss well to coat.
  3. Spread the veggie mixture evenly in the baking dish. Place fish fillets on top skin-side down if applicable. Squeeze lemon juice over the fish and sprinkle with zest along with additional salt and oregano if desired.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork.
  5. Garnish with chopped parsley before serving alongside lemon wedges.
