  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Seasonings: paprika, Italian seasoning, salt, black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper. Cook until golden brown and cooked through (5-7 minutes). Remove from skillet.
  3. In the same skillet, melt butter and sauté onion for 3-4 minutes. Add minced garlic and sauté for another 30 seconds.
  4. Pour in chicken broth and heavy cream; stir well and simmer for about five minutes until slightly thickened.
  5. Return cooked spaghetti and chicken to the skillet; toss to coat in sauce.
  6. Sprinkle shredded Monterey Jack cheese on top; cover skillet for 2-3 minutes until cheese melts.
  7. Serve warm, garnished with fresh parsley.
