  • 1 baguette, sliced into ½ inch rounds
  • 1 tbsp olive oil
  • 250 g Baby Bella Mushrooms, thinly sliced
  • 2 garlic cloves, minced
  • ¼ cup apple cider vinegar
  • 1 package Brie cheese, sliced
  • 1 bunch fresh parsley, for garnish
  • Salt and pepper, to taste
  • Crushed red pepper flakes, optional

Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush with olive oil. Toast for 3-5 minutes until golden brown.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant. Add sliced mushrooms and cook for 5-7 minutes until golden brown. Stir in apple cider vinegar and reduce by half; season with salt, pepper, and red pepper flakes if using.
  3. Top each toasted baguette slice with brie cheese and spoon the mushroom mixture over it.
  4. Bake for an additional 3-5 minutes until the brie is melted.
  5. Garnish with fresh parsley before serving warm.
