Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley (for garnish)
  • Crushed red pepper flakes (optional for heat)
  • Shredded cheddar or mozzarella cheese (optional for topping)

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat. Season chicken with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown, about 6–8 minutes. Remove chicken from skillet.
  2. In the same skillet, add chicken broth and scrape up brown bits. Stir in honey BBQ sauce and soy sauce; simmer for 2–3 minutes.
  3. Add penne pasta and enough water to cover it (about 1 to 1½ cups). Cover and simmer for 12–15 minutes until pasta is tender.
  4. Return seared chicken to the skillet and stir everything together. Let simmer for an additional 2–3 minutes.
  5. Taste and adjust seasoning if necessary. Garnish with chopped parsley, crushed red pepper flakes, and shredded cheese before serving.
