  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar cheese

Instructions

  1. In a large pot or deep skillet, heat olive oil over medium heat. Sauté bite-sized chicken pieces seasoned with garlic powder, onion powder, chili powder, cumin, salt, and pepper for about 5–6 minutes until mostly cooked.
  2. Stir in uncooked rice and Rotel (with juices), cooking for another 1–2 minutes to toast the rice.
  3. Add chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20–25 minutes until rice is tender.
  4. Stir in nacho cheese sauce and one cup of shredded cheese until melted and creamy.
  5. Garnish with additional cheese if desired and let sit covered for 5 minutes before serving.
