  • 8 ounces cream cheese or ricotta
  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • Zest of 2 lemons
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Prepare the Blackberry Jam: In a saucepan over medium heat, combine blackberries, water, lemon juice, and sugar. Simmer for 20-30 minutes until thickened. Smash berries as they cook. Let cool.
  2. Thaw the Puff Pastry: Allow puff pastry to thaw on the counter for about 20-25 minutes.
  3. Assemble the Twists: Roll out each pastry sheet into a rectangle. Spread half of the cream cheese or ricotta on one sheet and top with half of the blackberry jam. Cut into strips, fold in half lengthwise, and twist gently.
  4. Bake: Preheat oven to 400°F (200°C). Place twists on a lined baking sheet, brush with beaten egg, and sprinkle with lemon-thyme sugar. Bake for 16-18 minutes or until golden brown.
