  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh or canned)
  • ½ cup all-purpose flour (for streusel)
  • ⅓ cup brown sugar (for streusel)
  • ½ teaspoon ground cinnamon (for streusel)
  • ¼ cup cold unsalted butter, cut into small cubes (for streusel)
  • ½ cup powdered sugar (for glaze)
  • 12 tablespoons milk or cream (for glaze)
  • ¼ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour an 8×8 or 9×9-inch square baking pan.
  2. In a small bowl, mix together flour, brown sugar, and cinnamon for the streusel topping. Cut in cold butter until it resembles coarse crumbs.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream together softened butter with granulated and brown sugar until light and fluffy.
  5. Beat in eggs one at a time, then add vanilla extract and sour cream until smooth.
  6. Gradually mix dry ingredients into the wet mixture until just combined. Gently fold in peaches.
  7. Spread batter evenly in the prepared pan and top with streusel mixture.
  8. Bake for 40-50 minutes or until a toothpick inserted comes out clean.
  9. Allow cooling in the pan for 15-20 minutes before slicing.
