  • 2 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • ½ cup breadcrumbs (preferably panko)
  • 12 oz pasta (spaghetti or penne)
  • ½ cup homemade or store-bought basil pesto
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a skillet over medium heat and add olive oil.
  2. In a bowl, combine grated Parmesan, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  3. Pat the chicken dry and coat each breast in the breadcrumb mixture.
  4. Fry the chicken in the skillet for about 6-7 minutes on each side until golden brown and cooked through.
  5. Meanwhile, boil salted water and cook pasta according to package instructions until al dente.
  6. Drain pasta and return it to the pot; mix in basil pesto.
  7. Slice crispy chicken and serve over pesto pasta; garnish with additional Parmesan if desired.
